They are cactus leaves, specifically nopal, "prickly pear," and they taste like green beans with lemon juice sprinkled on them. They naturally have a bit of a sour taste. The texture is part crunchy, part meaty, with just a bit of okra like slime. They are delicious. The fruits are good as well, rather sweet.
