Well, just wait. Next week I'll take my smellovision to the market. Really one reason I love to go there is that its smells are wonderful, booths of open bins of spices & herbs, whole grain bakeries, botanicas full of medicinal herbs and tinctures of almost anything, veggies & fruits, half a dozen little restaurants with moles, tacos, seafood, dulcerias with chocolate, mint, candied squash, marzapan, every sweet imaginable, bins of roasted nuts, grains, & legumes...I run out of room.

That photograph of the pale green peppers is wonderful. Edward Weston would be proud of you.

My Italian grandfather would take similar-looking peppers and cut them into slices and fry them up with onions and garlic for what seemed like forever (maybe an hour) and then munch on this slathered over Italian bread for supper. Is there a favorite Mexican way of preparing them that you can share?

My favorite dish with the guero chile is served at the restaurant just down the street, Becera's. The chile is stuffed with smoked marlin & Monterrey cheese, grilled, and slapped on a tortilla with shredded cabbage, tomato & mayo, drenched in lime juice to taste at the table, a chile taco.
